Colombian Santa Barbara Estate Coffee

At Santa Barbara They have a great mix of volcanic soils, high altitude and an incredible microclimate. Their Coffees also benefits from fertile soils, which are rich in volcanic ash. Its altitude goes from 4,300 to 6,300 feet, with an average of 5,100. This high altitude means that our coffee takes longer to mature, and therefore produce denser and richer beans. This altitude is enhanced by a specific microclimate created by the Cauca River valley, where we are located. The warmth of the valley protects our coffee from the cold Andean nights, permitting them to grow coffee at higher altitudes.

And then comes the trees, they take pain in having very young, well-fertilized, healthy trees. For example, their trees are only pruned once (at age 6) and then replaced at the next cycle. The grounds are also monitored constantly to identify missing minerals that the tree might need before or after a harvest. They do this taking into consideration not only productivity but also cup quality. For example we are constantly measuring the potassium in the ground, which we have seen can affect the development of sugars in the mucilage of a ripened bean. You will see later why these sugars in the mucilage are so important for the final cup quality. To conclude, we take incredible care of our trees and our math is simple: you can only expect healthy beans from healthy trees.

Cupping Notes In our cupping notes, we find this coffee to be well balanced, medium bodied, bright and a slightly crisp coffee. The finish is medium-long, but very clean on the palate. There is a wonderful rustic sweetness that comes through with notes of milk chocolate; caramel and sweet black cherry that really adds to its complexity & is otherwise a very well balanced flavor overall.

ROASTED IN SMALL BATCHES TO GUARANTEE AN EVEN, MEDIUM ROAST - Small batch roasting is more expensive because of labor costs, but this roasting technique ensures that each batch of coffee is of superior quality and roasted evenly to the desired roast profile, not mass produced. This process draws out the best possible flavor in each batch. Small batch roasting permits a higher quality of standards in coffee throughout the complete process: from picking out the correct coffee beans, to choosing the correct charge & drop temperature & then to slowly roasting each small batch to perfection.
