We are glad to tell you that Brazil Mogiana coffee is a super sweet, nutty, low acidity coffee with lighter body, in a mild, pleasantly refreshing cup. It's not overly complex, but sometimes you just want a pleasant cup of coffee without being hit over the head with a whangy intense cup like an Ethiopia Harrar or a Yemen Moka Sanani.
The lighter body is joined with an very sweet and nutty flavor that make this a particularly refreshing cup. Brazil Mogiana coffee has taken its place in our ranks of preferred warm weather coffees (Ethiopia Yirgacheffe and Colombia Sierra Nevada are others). Anyway, in this case the lighter body thing works and works well.
The vast majority of these Brazilian coffees are they aredry processed (the fruit is allowed to dry on the seed and then is mechanically removed instead of being soaked in a vat of water to let fermentation loosen the sticky fruit), or as a coffee marketers there call it "naturally processed". Coffee from the Mogiana region (located in the north east part of the state of Sao Paulo in southern Brazil) is a medium to light bodied coffee, smooth as silk, and has a moderate to low acidity. The low acidity is fairly typical for a Brazilian coffee, but light bodied? Suprise!
This coffee is roasted to the medium roast level to protect its natural flavors. It needs to be slow roasted in order to bring out it natural famous flavor.
